Ginza Onodera Sushi Academy is run by the Onodera group, which is well-known for its Michelin-listed Japanese restaurants located all around the world.
In this school, you will be able to learn an invaluable set of skills from the very best of the Japanese cuisine world;
Learn cuisine etiquette from Michelin star chefs, who will teach you the correct ways to use and sharpen knives, prepare sushi ingredients and other dishes unique to Japanese cuisine.
Since its establishment in 2016, over a thousand students graduated from the academy and were able to acquire the skills needed in order to become top-class sushi chefs.
Note that this school’s courses are all offered in Japanese only.

Ginza Onodera Sushi Academy strongly believes that it is important to have the mind and the body synchronised in order to acquire the technical skills needed to become a top-class sushi chef.
The academy gives students an opportunity to create their own curriculum based on their interests and pace with 4 course options:
Each class is 60 min long and students can freely decide which classes they would like to join. In addition, the program is designed in a way students can join immediately, according to their personal availability.
By the end of the course, students will graduate with a broad knowledge ranging from the history of Edo-style sushi, proper rice preparation and perfect technique to restaurant management, hygiene and Japanese kitchen etiquette.
